Chicken Fricasé
Seasoning For Chicken:
2 pounds boneless & skinless chicken breast, cut in big cubes
1 tablespoon olive oil
1/2 tablespoon vinegar
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon dry garlic minced
1/2 teaspoon red crushed pepper
1/2 teaspoon dry leaf oregano
Fricasé:
2 tablespoons olive oil
1 medium onion, chopped
1 medium green pepper, chopped
1 medium tomato, chopped
3 garlic cloves, minced
1/2 cup tomato sauce
10 red pepper stuffed green olives, sliced
3 medium potatoes, cut in cubes
1 teaspoon salt
1/4 teaspoon pepper
4 cups Water
In a large bowl add the chicken cubes. Season the chicken with olive oil, vinegar, salt,
pepper, dry garlic, red crushed pepper, and oregano. Set a side for 30 minutes. In a
large pot add the olive oil and heat in medium heat. Add onions, 1/2 teaspoon salt, and
pepper stir and cook for 5 minutes. Add the green pepper, tomato, and garlic stir and cook
for 5 more minutes. Add tomato sauce, olives, 1/2 cup of water, and chicken. Stir and cook
for 5 more minutes. Increase the heat to high. Add the rest of the water, potatoes, and
1/2 teaspoon salt. Stir well, cover pot and bring to boil. Lower the heat to low and
simmer for 1 hour. Serve over white rice.
